The cider syrup can be kept for a week and is worth making on its own to serve with other pancakes and waffles.
For the cider syrup, stir together in a small saucepan:
1 cup apple cider
3 tablespoons light corn syrup
1 tablespoon light brown sugar
1 tablespoon fresh lemon juice
Bring to a boil, then reduce the heat to medium and boil, stirring occasionally, until the mixture is reduced by half, about 10 minutes. Remove the pan from the heat and swirl in, piece by piece:
2 tablespoons cold unsalted butter, cut into 6 pieces
Serve immediately or let cool, pour into a jar, and refrigerate for up to 1 week. Reheat (but do not boil) before using.
To prepare the apples, peel, halve, and core:
3 Golden Delicious apples or other firm, sweet apples (about 6 ounces each)
Cut each half into 6 wedges. In a large skillet, preferably nonstick, melt over medium heat:
2 tablespoons unsalted butter
Add the apples and cook, stirring frequently, until the apples release their juices and start to soften, about 5 minutes. Sprinkle with:
2 tablespoons sugar
Stir to mix. Continue cooking the apples, turning them occasionally, until they have a light crust and are golden caramel in color, 10 to 15 minutes. Use the apples immediately or cover and keep at room temperature for up to 2 hours. Reheat before using.
To assemble the dessert, place a seasoned crêpe pan or skillet over medium heat and coat it with a little:
Unsalted butter
One by one, add:

Heat one side only in the hot pan for about 30 seconds. Fold the crêpe into quarters, so that it forms a ruffle-edged triangle with the brownest side out, and transfer it to a warmed dessert plate. Arrange 2 crêpes on each plate so that they overlap each other slightly in the center. Continue heating and arranging the crêpes, rubbing the pan with a little butter before heating each one. Divide the hot caramelized apples among the plates and spoon the warm syrup over all. Serve immediately as is or topped with:
